Before discovering all refinements of the Cognac, a taster will take pleasure to seek by the sight and the sense of smell of invaluable indications. The appearance of the Cognac gives a first indication on its viscosity and its limpidity. As soon as glass of the nose is approached, the most volatile perfumes escape: it is the rising one. After a delicate movement of rotation of glass, it is the essence of the bouquet of the Cognac which appears. One finds floral or fruity odors there such as: dried lime, flower of vine, dry vine shoot, pressed grape, violet, vanilla... it is the second nose.

It will thus act, thanks to this sensory examination, to control the various stages of distillation, to follow the evolution of ageing, or to carry out the assemblies necessary to making of the cognac and, finally, to appreciate the characteristics of the end product put on the market.
